Keep these helpful tips in mind when you're making homemade pumpkin cookies.
- Choose your favorite flavor of cake mix. We loved the classic combination of pumpkin and spice cake, but it's also good with yellow, white, or chocolate cake mix.
- Add mix-ins like dried fruit, chocolate, or nuts. If adding nuts, toast them first for the most flavor.
- To help the cookies bake evenly, flat each mound of dough after you drop it onto the cookie sheet.
- Cool the cookies completely before eating.

Prepare Pan
Preheat oven to 350°F. Line cookie sheets with parchment paper.

Mix Ingredients
In a large bowl stir together cake mix, pumpkin, and cherries and chocolate chunks (if using). Drop dough by rounded tablespoons 2 inches apart onto prepared cookie sheets. Flatten slightly with damp hands.

Bake and Cool
Bake until cookies are set, 10 to 12 minutes. Cool on cookie sheets 2 minutes. Remove; cool on wire racks. If you like, sift powdered sugar over cookies
