This Ranch Poolside Dip Will Be Your Go-To Summer Appetizer
Often called Loaded Ranch Dip, this easy appetizer is perfect for bringing along to the pool, summer parties, or potlucks. In addition to cream cheese and ranch, each bite is loaded with fire-roasted corn, olives, bell pepper, and lime. If you like a little bit of spice, try adding chopped jalapeno peppers.
Tips for Making Pool Dip
Here are a few of our Test Kitchen's best tips for making homemade poolside dip.
- Ensure your cream cheese is softened before mixing in the other ingredients. This helps ensure there are no lumps of cream cheese in the finished dip.
- Our recipe testers preferred the flavor with the full 2 tablespoons of lime juice.
- When adding the jalapeno peppers, be sure to remove the seeds first. This helps control the spice level.
- Serve the finished dip with tortilla chips, crackers, fresh veggies, or potato chips.
Ingredients

2 (8-ounce) packages cream cheese, softened

1 (1-ounce) packet ranch seasoning mix

1 (15-ounce) can fire roasted corn, drained

3/4 cup finely red bell pepper (1 medium)

1 (2.25-ounce) can sliced pitted ripe olives, drained and coarsely chopped

1 fresh jalapeno pepper, seeded if desired, finely chopped

1 to 2 tablespoons lime juice

Potato chips, tortilla chips, crackers, and/or assorted veggie dippers

Finely chopped jalapeño peppers or sliced olives, for garnish, optional

In a medium bowl using an electric hand mixer on medium blend cream cheese and ranch seasoning until smooth; Stir in corn, bell pepper, olives, jalapeño pepper, and lime juice. Top with additional jalapeños or olives, if desired. Serve with dippers.
How to Store Pool Dip
Store this pool dip recipe in an airtight container in the fridge for 3-4 days. If serving the dip at a party, don't let the dip sit out for more than 2 hours before placing it back in the fridge.
